i have been searching through the GOG website for stones...can they source a stone not currently on their website that will be as well cut as the inventory stones???

You have to ask them to check to find out.
Their preferred suppliers may have something in stock or in the pipeline.

I purchased a stone from them about a week and a half ago. While my stone was already on location, I do not think they would have a problem getting in whatever you want.
