Would a girdle thickness of 0.7 to 1.0% on a 1.1c round be classed as very thin ?

By AGS standards it is considered thin and within Ideal proportions. You can do a search on here for girdle thickness and it will tell you how other labs grade girdle thickness!

Would it be safe for an ring mounting? I''ve heard thin girdles may chip??

Definetly! You will be fine. Thin, medium, and slightly thick girdles are preferred. Some people here prefer thin, some medium, and some slightly thick. With any of these, though, you will be fine. The only girdle thickness that you should be weary about is extremely thin which puts the diamond at risk for chipping during setting or if you give it one GREAT BIG knock like slam your hand in the door or something and thick and extremely thick girdles which essentially just adds weight to the diamond and impedes light return.

Soooo...after all that, as long as your jeweler is reputable and experienced, you should not worry about having a diamond with a thin girdle withstanding the pressure of being set. (which is pretty much the environment in which the diamond will be under the most pressure)
