Can you make changes to a knife edge engagement ring?

I'm looking at a 14k knife edge engagement ring for my girlfriend but I think it may be a little too wide. It's around 2.75mm and I'd really like it to be closer to 2.5 or less. I know it's not a problem with a standard band. Is it more difficult to change a knife edge band? If you start buffing it down will it lose its "knife edge?"

I would look for one the right size. You can get many different kinds. Mine is less than 2mm.
