I don’t think that it will be that obvious. Melee stones always face up bright and white and G/H is standard melee for most stock settings.
Can you test it out in person?
It depends how color sensitive you are. Try to see some examples irl but if you can’t ask yourself can you easily see the color difference in a GIA G vs E and would that bother you and that should help you decide. Melee are always brighter because they are smaller so that will also need to be taken into account.
We all have different sensitivity but generally 2 grades or less has a better chance of being acceptable than a 3 grade color difference. And what lab is grading it and the size difference too between the main stone and the melee. Many factors to consider.

I just tried that on with a 5mm center if you want “real life” pictures.
I do think it’s much harder to see color in melee, but if you do see it, it would be hard to ignore.
I would mix them. I'm color observant, but color does not bother me. Melee always face up much whiter than a larger stone of the same grade. It you are going custom, you can get solid G or higher if you really want. In a stock setting, it would be hard to find something other than a big-name that has higher color melee that can be ordered.
