buying wedding favor candy!! how soon can i get it??

we are having 2 weddings.. because of our cultural backgrounds.. we are having one next weekend.. sunday the 21st.. we have 4x6 satin bags that are personalized with our names and dates.. i wanted to know how soon can we go buy candy for them and start putting them together? whast the best way to store them to make sure they will be freash and good to go?

we have over 100 guests and i want to knock some last minute things out so we can have less stress...


we are thinking of using chocolates.. maybe some choloates with a shell coating.. but a variety of them.
 
Well, chocolate sits on a shelf for months, so you should be safe to get it tomorrow.

The biggest thing is keeping it away from moisture and heat. As long as you can do that it''ll stay fresh if you put them together soon!
 
I think as long as you''re not going to use fresh truffles or something like that from a pastry shop then it''s fine to start now. You''re certainly fine if you use anything with a shell coating. Just keep them in a cool place like neatfreak suggested.
 
thanks for the replies.. what type of chocolates or candy is appropriate for weddings? i know jordan almonds are pretty common but i want to know if there were some nice candies that i should look into.. should i just go to the candy section in the grcoery store to buy candy in bulk? im guessing that would be the cheapest route..

These days anything goes. Yes jordan almonds are traditional in some cultures, but if you just want a nice favor for people to take home just go pick the yummiest looking candy you can find! Many people these days like to match the colors to wedding colors as well, but I don''t think that is necessary unless you want to.
 
With chocolate you just need to make sure you store it properly so it doesn''t bloom (that''s when it gets kind of greyish). Moisture will cause sugar bloom, which doesn''t look pretty (splotchy and white) and changes in temp will cause fat bloom (kind of an all over greyish color). Neither are harmful to eat, but they certainly take away from the pretty finish on the chocolate. It should be stored at about 55-65F and a humidity of less than 50%, which might be easy or difficult depending on where you live and what conditions are like in your house (I know at this time of year there are plenty of cold corners in my house and it''s pretty dry from the heater being on).

What kind of candy were you thinking of buying?
