Hey I made Mr. DKS a cake the other night...long story on another thread...but I put away the timer and didn''t hear it when it went off.

End result...have to preform the Heimlich maneuver each time he eats a bite. Seems to take a bit of joy away from the comfort of dessert. So, I was thinking...why not use the DRY cake as the bread in bread pudding? Any thoughts on this?

The cake was sweetened with honey and barley malt and has coconut and pineapple in it. I have walnuts and almonds and raisins. I think I may have coconut milk and almond milk too. I am thinking what do I have to lose? (Of course there is the obvious...

a husband if he continues to attempt to choke down my cake...) but should I just wing it and make the pudding?

Any thoughts?

It sounds good to me! Just don''t sweeten the cake pudding as much as you would a bread pudding or you''ll find it inedible! Lots of recipes are based on dousing dry bread or cake in liquid!!! Let us know how it comes out!

Sounds very yummy!!! Will you be making a hard sauce to go with it? I love coconut and pineapple with rum hard sauce!

The heimlich maneuver, dry, crumbly cake is no more...what is in it''s place is a moist fluffy cornucopia of dessert nirvana! It is fabulous! If I do say so my self!!

The cake actually tasted and looked like a cake donut. You know the one that is sorta brown...like brown sugar. I can''t think what that particular donut is called...but I remember eating one as a child. My original cake with the malted barley sweetener was very close to that flavor. So just imagine taking a couple dozen of those donuts and breaking them up in a creamy sauce with added carmelized walnut, raisin, coconut, and vanilla nut extract...baked to a have a crust. Then served with a coconut butter cream sauce...a touch of vanilla ice cream (rice dream).

Yeah, like I said... a genius! Please... hold you applause until we get to the end.

I have seen a recipe before that uses krispy creme donuts as the bread...in bread pudding. Have seen cinnamon raisin bread used...But Deborah...this cake thing is MY IDEA!! Don''t you go and ruin my boasting time and tell me someone else somewhere did something with a cake!! I just won''t have it. The idea was MINE MINE MINE!! But it does have great merit in using an existing cake...any cake you get at bakery...of course my saving a cake in agony...well, again GENIUS!!

Oh...it was all done with natural sweeteners...honey, molasses, barley malt, almond milk-and the crowd roars!!!
 
Well, I do love a good bread pudding so I am a bit biased... does your hubby?

The only cake I have seen doused is the cake in a tres leches cake recipe and that, you know, is not baked after the dousing! You are quite right that you are the only person-I mean GENIUS- to have thought of using a cake in a bread pudding, DKS. As far as I know ;-)

Glad you agree Deborah...you on the Genius part...

(oh for goodness sakes who am I kidding..there is no genius cells anywhere close to my pumpkin!! For all the misspellings and typos here it is apparent...I was left out in that department.)

Yes you are right about tres leches...and many other sponge type recipes. I should have thought more along those lines...and just may next time!!

Over all it turned out better than the dry cake. And was pretty yummy. I think if I ever venture to make a bread pudding specifically, I think I may begin with a cake of some sort instead of bread. Hubby is a strange bird. He actually likes fruit cake. Well, he thinks he does. He hasn''t had ANY for 23 years. But he recalls it to be great. I am trying to concoct a version with no preservatives and no refined sugar. That is my next endeavor.

DKS, I think you need another serving of cake pudding. You lost your confidence after the first serving wore off. I think it has some special qualities, like the victuals Alice finds in Wonderland. Or was that through the Looking Glass? At any rate, when you first ate it you knew you were a Genius. Go back and have another nibble or two. Life is too short for you to go unrecognized ;-).
