appraisal for insurance

Hello! I was hoping someone could give me some input on my confusion about insurance appraisals. My girlfriends all told me their rings were appraised for almost double what they paid for them, but the store where we purchased my ring only appraised it for a little bit above what was paid. I was wondering if we should ask them for another appraisal to adjust for future market value? We had the stone independently appraised before purchasing to make sure it was up to par, but I didn''t think we needed to take it back for an independent insurance appraisal. Please let me know your thoughts! Thanks so much!
