My understanding is that AGS and GIA aare pretty comparable in strictness of grading. i.e. a G color should be similar for both and a VS2 clarity should be comparable. The current difference is that GIA doesn't grade cut, so doesn't provide crown and pavilion angles. If you ask for a Sarin report on the stone, and get thos numbers, you can get an apples to apples comparision. THe premium you are seeing might be based on cut figures that you don't have to compare.
Non-Ideal cut diamonds can still be graded by the GIA as having Excellent polish and symmetry because those factors have nothing to do with the proportions and thus you need to obtain the Crown & Pavilion angle measurements to make the comparison to the AGS-0 Ideal Cut grade.
