The e-ring and matching band that I'm looking at have side stones/channel set stones that are G-H/VS in platinum. Would I be safe having an H colored center stone (~.75-.85ct) or would you be able to see that 'barely there' hint of color/warmth? Please advise!

You're definitely safe. I have the same situation and can tell you that the difference between G and H is barely detectable in bright light and not at all in most lighting situations.
