 		Our wedding and reception is going to be outdoors...no DJ, music provided by our own stereo/speaker system & iPod. Could we ask our JP to do other speaking, like be the one to introduce us...be the one to announce cake cutting, etc.?

Ditto... the vast majority of JPs will not be jazzed about doing that. Not to say that no one would, just most...

 		If JP is Justice of the Peace, they usually depart after the ceremony, unless you know them socially.

 		I know that traditionally, the bride's father is supposed to be the "official" host of the reception, so maybe your dad would enjoy that responsibility.
