 Italian restaurants please........?

My son is ending his first year of culinary college in Chicago.. he will be required to do an 3-6 month internship at an upper scale restaurant for experience that does 85% of its meals by scratch.

His area of interest is specifically fine Italian cuisine. Can anyone suggest restaurants in either Chicago or Seattle that might give an up and comer an internship??

Not in Chicago but there is an amazing italian restaurant (but the food is more fine dining) in Madison, WI (so near Chicago!) that is very into teaching. I would bet they would do internships...I am drooling just thinking about it:

The owners are super nice and own a number of high end restaurants in Madison (which we actually have many!). But I'm not sure if it's too far out of Chicago, it's about 2 hours.

YUMMMM!

My two favorite Italian restaurants in Chicago are:

Sapori Trattoria on Halsted, this is in the DePaul neigborhood (773-832-9999)
Orso's on Wells, this is in Old Town (312-787-6604)

If you ever go to Sapori you must try their lobster ravioli. I crave it nearly once a week, it's that good. Orso's is just plain delicious, too, and they have the best outdoor seating.

My FSIL was an intern at Shingle Creek. He should try there instead of Disney. She loved it there.

My SIL was lucky and studied under Todd English.  Way before he became famous.  I'll ask her for her Rec's, and get back to you.   She got such a great education from him, and was even on GMA a few times.  She went to school in Boston, but has contacts all over.
