Share your faves, fattening or not!


For Miss Lorelei

Sweet Potato Casserole

3 c. mashed sweet taters
1 stick butter
1 c. white sugar
2 eggs
2/3 c. evaporated milk
1 tsp. vanilla

Mix and pour into greased casserole dish.

Sprinkle 1 c. pecan halves (or chopped) over top.


Topping

1 c. brown sugar
2 tbsp. flour
1 stick butter

Mix til crumbly, sprinkle over all.

Bake at 350 for 40 minutes.

Ok here is one which is a traditional English side dish served with many meals such as roasts, they go well with turkey and all the trimmings.

English Roast Potatoes

You will need - enough potatoes you would normally use to serve each person, peeled and cut into large chunks.
Crisco or vegetable oil, some even use lard

Method

Peel and cut potatoes into chunks and pre boil for 5 mins.  In the meantime have a dish in the oven which measures about 2 inches deep, with about an inch of fat such as veg oil or Crisco to heat up.  You want the fat sizzling hot.  Drain the potatoes after boiling, return to pan and give them a shake to roughen up the potatoes a little and 'smudge' the outside surfaces.  This enables the potatoes to crisp when cooking.  Once the fat is very hot, carefully add the potatoes to it, turn them with a spoon to make sure they are evenly coated.  Cook in a hot oven for about half an hour, turn every few minutes to keep them basted in fat, until golden.  They will be fluffy on the inside and crispy on the outside.  Season and serve. Yum.

No I did not know that!! 

Oven temp, I use gas so I am thinking about gas mark 8 is what I normally use, trying to cross reference....You want the oven very hot to do these taters.

400 deg = gas mark 6, so you want about 425 - 450 deg ( gas mark 7 and 8)

I have one to add which is sooooo yummy but super bad!!!  I use to make these often when i was younger.  My friend who is an aerobics insturctor gave me her family recipe after loving these!!!


This is my favorite recipe EVER!!! 
Works best with a Kitchen Aide; otherwise it is truely a chore.



Danish Butter Rolls (time: 3 hrs)



5-5 1/2 cups flour
1/3 cup sugar
1 tsp. Salt
2 pkg. Yeast
1 cup milk
3/4 cup butter
2 eggs
1 tsp Vanilla
put aside another 1/4 cup butter softened to later put on dough when
 rolled
out
Preserves (your favorite on danishes)



Filling:
1/4 cup brown sugar
1 tsp. Cinnamon
1/4 cup chopped pecans
1/2 cup softened butter



Frosting:
Butter
Powder sugar
milk           * Mix more powder suger and butter and just a little
 milk
until the right drizzling consistance.



In Bowl 1.  warm milk and 3/4 cup butter together.  Dissolve 1 pkg
 yeast in
warmed milk mixture.



In Bowl 2. (preferable kitchen aid bowl) Combine 2 cups flour, sugar,
 salt,
and the other pkg yeast.  Set Aside.



In Bowl 1 add eggs and vanilla.  Then add this mixture to bowl 2.  Beat
 for
3 minutes, then slowly add the rest of the left over flour  to bowl 2.
  Form
a stiff dough.  Then Knead for 3 minutes.  Cover.  Let stand until
 double
(about 45 mins).  Meanwhile, prepare filling.  Combine the filling
ingredants together and cover with saran wrap so it doesn't dry out.



Roll out dough to a 24x12 inch rectangle. Spread with soft butter.
  Sprinkle
on filling.  Roll up.  Cut into 1 inch slices.  Place cut-side down on
well-greased cookie sheet, 3-4 inches apart.  Flatten to 1/2 inch
 thickness.
Make a depression in center of each roll and fill with 1 tsp of
 preserves.
Cover, let rise in warm place 30-45 mins.



Note: I do half the dough at a time because only 1 cookie sheet will
 fit in
the oven at a time.  I keep the other half of the dough in the
 refrigerator
until ready -- this way it won't over-rise.



Bake at 375 for 10-12 minutes.  DO NOT OVERBAKE.  Let cool.  Drizzle
 with
powdered sugar/milk/butter frosting mixture.



They are yummy!!!

one of my all time favorite foods... very German.
Fleischkuechle:


Filling
1 lb. raw hamburger
a little onion chopped fine <--- onion salt usually
salt & pepper to taste <-- can use taco seasoning
2 eggs
Mix together in bowl


Dough
In a separate bowl, mix together;
3 cups flower
1 egg
1 cup milk
1/2 to 1 tsp salt


Mix together and make into small balls, place ball on floured surface and
roll about 1/8 inch thickness, size of a saucer about 6" in diameter. I
usually make sure they are floured on both sides so they won't stick when
you roll them. I usually roll a little on one side and then flip it over
and finish rolling so they won't stick to the table or rolling pin.
Put 1 or 2 tablespoons, filling on half of the circle, then fold over and
seal with a plate or a fork or press the edges with your fingers.


Now you are dealing with hot oil, so be very careful.


Deep fry in a kettle of oil. Put enough oil
in so it covers them good and make sure the oil is hot before you put them
in; don't put it on too high, usually 375 to 400 degrees, fry till golden
brown. Remove from kettle or stir fry pan and drain on paper towel after
you take them out.


How to serve:

cut in half and fill the pocket with whatever you like.
The preferred method is just eat with catsup.

We always made triple batches for 4-5 people, they freeze well and will keep for 2 days in the fridge.

but my grandma could never figure out what we were saying so its not right LOL

from my dads side who grew up in Minnesota ..

INGREDIENTS:
5 cups mashed potatoes
1 tsp. sugar
1 tsp. salt
1/3 cup solid vegetable shortening
2-3 cups flour
PREPARATION:
If you can, mix all ingredients except flour while the mashed potatoes are hot, then let cool. If you can't, heat the mashed potatoes in the microwave until hot, then add sugar, salt and shortening.
Add flour and mix until you have stiff dough.


The amount of flour you will add depends on the consistency of the potatoes, the humidity in the air, and your own taste. The less flour you add the better. Just add flour until you get a nice, workable, stiff dough.
Pinch off portions the size of an egg. Roll paper-thin on a floured pastry cloth, using as little flour as possible. Heat electric griddle or frying pan to medium high heat. Place each lefse on hot griddle and cook until light brown spots form on the bottom. Turn over and cook the second side until light brown spots form. Remove lefse carefully from griddle and stack between paper towels. To serve, spread with softened and sugar (brown sugar is my favorite). Roll up and eat!

I forgot too mention that the dough for Fleischkuechle also makes kicken doughnuts when deep fat fried then dipped in sugar.
Just roll it out and cut it into sqares then cut 2 slits in it then tuck the corners thru the slits pulling them thru. It will end up looking long and curled.
Fry until golden brown and dip in sugar once they are drained.
serve warm, they get hard when they get cold.

Skippy, I'm sitting here giggling. My son (youngest) just yelled down he is going to make brownies.

He's going to be 17 the end of Aug. My middle one is 21 and oldest is 23.

His favorites to make are brownies (homemade), which he loves to experiment with, adding different stuff. The best I personally like is the regular recipe with cream cheese swirled through it.

He also likes making choc chip cookies, oatmeal raison, peanut butter (his favorite food I think, lol). Then there's just been random sweet stuff he's tried. I need to teach him cheesecakes....
