At this point I'm tending to Stones 2 and 3 because the numbers seem to match more closely.  But the tables are more similar between 1 and 2... 
They'll be set in 3-prong martini style earrings.

I'd really appreciate advice from those more wise than I!

I think they are all contenders.  You didn't list the diameters or the price.  At this point, I think they are all all well enough matched that your eye won't see a difference in performance in earrings.  So, you chould check the diameters (that is the size that will be visible) and the value.  If they are all similar, I think they will all be good pairs.  I like the idealscopeof #1.  (2 and  are good to, but I like #1 best). 

edited to add:  I say that all 3 would be fine because I obsessed about finding stud stones last year.  I ended up with a pair that were not as closely matched for performance as yours, but based on some expert recomendations, I sent the two stones to Rich Sherwood for appraisel.  He said they were going to be a great pair, so I went for it.  To this day, with a loop, I haven't figured out which stone is which.  One has slightly better specs than the other, but I can't tell them apart with a loop, much less with out one and even less than that, on my ears.    That said, I had a pair before that was enough off in diameters, that I could see it in the mirror, and it bugged me.  Thus, my suggestion to double check the diameters, even to these are all probably very close.

In case the measurements help anyone else to give me their tips:

Stone 1:  4.35-4.38x2.68
Stone 2:  4.36-4.4x2.71
Stone 3:  4.37-4.4x2.73

#2&3, although they all look great, just my 0.2 . 2&3 are very well matched IMHO.

The diameters of the 3 are perfectly matched.  If it was up to me I would either pick the best priced or I would ask the vendor to eye ball them and pick the best pair.  Going with one vendor will simplify things if they are not all from the same vendor.  w & 3 do have a lot of the same specs, but I really can't believe that your eye would see the difference in any of them.  They all look like winners to me.
