 		In terms of percentages, what would be a good appraisal on a loose stone? How much more should it appraise for than what you paid?

any more and you pay too much insurance.
The idea that you get a high appraisal suggests you are clever and beat the system. That is silly. If you want to know you got a great price - ask me to tell you.

I will write to you "wow you got a great price, you must be very clever :)"

If you bought retail then it should be appraised retail, if you bought online then it should be a lower online appraisal :)
