I'm just wondering if the following measurements are considered good for a 1.73 carat round diamond-->
7.60 x 7.54 x 4.81
I have been looking around at other stones of the same cut and carat weight, and they seem to larger in diameter. Any help would be greatly appreciated.

The spread index of this diamond is 6.31, so it may be smaller than other diamonds of similar carat weight.

So what carat weight does this diamond appear closer to?

You could expect to find the same diameter on a well-cut 1.58ct diamond.

This is very upsetting. Do you think the jeweler should have explained this to me before I bought the diamond? I feel like I paid for carat weight that I can't see. Should I demand to exchange it for another one?

I would say that if you are happy with the way your diamond looks and are happy with the price you paid, forget the comparisons and enjoy your diamond.
