There is no real definition of "ideal" in fancy cut stones that I know of except for the cut grading chart by Dave Atlas found on www.gemappraisers.com . The reason nearly all major labs have yet to devise a cut grade for fancies (and their opinion on "ideal" cut) is that it's very difficult to predict the beauty of a fancy stone just by numbers. Dave Atlas' chart does give a good start of what to look for, but can not definitively tell you if a diamond is going to be beautiful or not. His range for ideal table and depth (keep in mind there are other factors necessary to determine ideal cut like crown angle, girdle, etc.) ia depth 64%-75% and table 62%-68%.

In my search I've learned that it's more important to BALANCE the table and depth--while staying in the ranges Dave provides. I've seen some stones that don't look right at all when they are extremely deep but have very small tables, and stones with large tables and low depths. Try to find a stone with a table that is smaller than the depth but not too discrepant. I prefer stones with tables and depths in the high 60's to low 70's. Hope this helps!
