I have been reading a bunch of information recently and have discovered that some say the color is more important than the clarity, when it comes to choosing a diamond on quality. What is the real difference?- and if the most important quality to me is the shine- what should I be looking for most? I hear the cut is the real difference. Does the rest matter all that much?

The cut is the most important C in determining the beauty of a diamond. Try reading the tutorial on the site...it may make things clearer for you. :)
