And then he decided he didn't want to have dinner at home! We ended up having it the next day as leftovers, but it was definitely not as good. I actually roasted it like the Zuni Cafe recipe, and the bread salad was delicious! But I kept it lemony by sliding lemon slices under the skin along with thyme sprigs. OMG I LOOOOVE Zuni chicken!!! My dad has been making it for years... I made it for my BF's family when they were visiting bc my BF's dad always orders chicken at restaurants. It was a big hit. I need to get my butt down to Market St and finally try the real thing...

Oh, it's ok...we got our wires crossed somehow about dinner plans. But the Zuni chicken is amazing. Go, ladies, make roast chicken!
