Looking for suggestions on a cathedral style setting

After 10 years since our first meeting, I am looking to propose in the coming months. After a lot of online work and a few hours in stores, I am leaning towards a cathedral style setting, with 5 channel set diamonds on either side of the central stone in reference to the time we have been together. The center stone would be from a family piece, a 1.13ct / F / VS1 / round brilliant cut.

I seem to be gravitating to a style similar to the Tiffany Harmony setting, with leaning towards a more tapered/organic flow up to the main stone. Here are some examples of what I have liked, although obviously nothing has said THE ONE to me as yet.

I was hoping you all might have suggestions on where else to look for this style, either on the internet or locally (I am in the Boston,MA area) that would be able and trustworthy to incorporate an existing diamond into a setting. Thanks!

Our aesthetics are pretty well aligned (thank goodness!), so we tend towards clean lines, no diamonds on the side of the basket, not a lot of engraving, scrollwork, etc.

A more general question:

At one store, the salesperson seemed to suggest that there would be issues if the setting were made without the center stone present. Obviously, each diamond is unique, but would a jeweler really have difficulty finishing the ring securely if I were to go the Whiteflash route?
