I'm thinking of upgrading to a VC Evelyn with an open profile, but I don't want to buy a center stone from him. Can you get a center stone from somewhere else? Also, does anyone know the price point for Evelyns?

Yes, you definitely can provide your own center stone for rings only. I will let others who have the ring reply to those questions, but I believe the shanks are usually between 1.8-2 mm. Price of the setting will have to do with the size of your stone and ring size, but hopefully you will get an idea of the range.
