Can someone please explain why this stone is rated "very good?"

Because of the large table and shallow crown.
GIA issues a proportions-based cut grade - you can play w/ Facetware here https://www.gia.edu/facetware/

I plugged in the numbers into GIA's Facetware cut estimator and it came out Very Good also.

Thank you for the link. I guess I was surprised since the table percentage seemed much larger than the range I've heard you should stick within, and it seems like the top of this diamond would probably be pretty flat.

You need to stick to GIA Excellent cut because very good's generally are going to have some problem (like the huge table on this one) that we would not recommend. Even the excellent range is very broad, and some diamonds are going to be better than others.
