ADG, Oooh quiche sounds like the perfect addition for a shower! I don't really have a recipe but typically I throw stuff together. Pre-bake the crust (1.5 c flour & 1 c butter. pulsed in my food processor with 6+ tbls of cold water. It looks shaggy like rolled oats. gather, let it rest then press into pie/tart shell, or roll out and lay in shell. Bake 400F for 15 mins until it's golden. Oh prick the bottom all over with a fork before baking). For the egg part, I start with a high bake (400-425F) then lower it to 300F for a longer time. The higher temp puffs the egg up, the lower temp sets it. I think I'd bake for 1+ hrs??

Here's the recipe I use for frittatas.
Spinach and Potato Frittata 2 tablespoons olive oil 6 small red potatoes, sliced 1 cup torn fresh spinach 2 tablespoons sliced green onions 1 teaspoon crushed garlic salt and pepper to taste 6 eggs 1/3 cup milk 1/2 cup shredded Cheddar cheese 1.Heat olive oil in a medium skillet over medium heat. Place potatoes in the skillet, cover, and cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Season with salt and pepper. Continue cooking 1 to 2 minutes, until spinach is wilted. 2.In a medium bowl, beat together eggs and milk. Pour into the skillet over the vegetables. Sprinkle with Cheddar cheese. Reduce heat to low, cover, and cook 5 to 7 minutes, or until eggs are firm. The recipe is really flexible and the key really is the ratio of eggs and milk (and cooking instructions: covered, low heat, and use a non-stick pan if you can). You can also make these substitutions for the spinach and potatoes (and cheese): bacon and tomato OR asparagus, mushrooms, and mozzarella (in place of the cheddar). |

Thank you everyone for the fabulous ideas! I ended up going with the minis, they were so pretty on the serving tray, I did multi different ones for variety pulling ideas from the different recipes and they ended up turning out great, we had a really good time so thanks again for the great suggestions!
