There are beautiful examples of diamond and sapphire three stone rings as well as blue center and yellow or other color sides.

What are the drawbacks to having a three stone blue or yellow sapphire ring, both center and sides? I can see two but don't know enough to say whether there aren't ways to get around them. 1) that it would be difficult to match the center and side stone colors. 2) that sapphire sides might darken the center sapphire?

I don't think the sides would darken the center stone like a halo or bezel would. I think three stones rings usually come with a different color sides to put focus on the center stone (by contrasting colors), increase finger coverage (without having to have a huge 1 stone), and because arrangements in odd numbers look visually appealing from a design standpoint. Also, as you are alluding to, matched pairs can sometimes be easy to find (in some stones and colors) because they are made for earrings, and other jewelery where you need a pair.
