Is it possible to detect / see / predict a window in a gemstone when viewing a gemstone directly from the pavilion? (perpendicular from the table but from the other side, pavilion side)

Yes, looking from the pavilion through to the table, all colored stones are one big window. Because of this, there''s no way to distinguish a well cut stone from a poorly cut one when looking through the pavilion, perpendicular to the table.
