Hi there,
I am not sure if my memory is right, but was it you and your hubby that had a TexMex rehearsal dinner?

If so, would you be willing to share your menu?

Our RD is going to be at a different building at the same venue as the reception, and we love our caterer, and although they''re not a Mexican restaurant, they have done a lot of those types of parties,etc.

It''s probably pretty hard to mess up a taco bar, but besides tacos, fajitas and rice, I wondered what else we could put on that would be a crowd pleaser-

Here''s what we''re planning so far:

Taco bar: hard & soft shells, filling of either seasoned ground beef, seasoned Boca Crumbles (fi is vegetarian), or shredded seasoned chicken, olives, lettuce, other taco fixins

Fajitas: soft tortillas, chicken, beef, grilled onions/peppers/jalapenos, sour cream, guac

Seasoned Rice

black beans/refried beans (might not be a good idea night before wedding!)

Corona, Dos Equis, and Margaritas

soda/ice tea/lemonade

Yep, that was us! I don''t know what it''s called, but there was a chicken dish that was a big hit. We also had fajitas, chips, rice and beans, Coronas, wine, soft drinks, and I can''t really remember what else. I''m sending my MIL an email right now and I''ll get back to you.
